1 - 3 lb chicken
10 cups water
2 tsp salt
1/2 cup uncooked long grain rice
1/2 cup chopped onion
1/2 cup chopped celery
1/2 cup sliced carrots
1/2 cup corn kernels
1 can (4 oz) green chilies
1 can (14 1/4 oz) stewed tomatoes
1 clove garlic
1 1/2 tsp chili powder
1 tsp seasoned salt
1/2 tsp lemon-pepper
1/2 tsp Creole seasoning

Directions:
Directions:
Place chicken, water, and salt in a large kettle. Bring to a boil; skim foam from broth. Reduce heat; cover and simmer for 1 - 1 1/2 hours or until chicken is tender. Remove chicken, let cool, debone and dice. Skim fat from broth. Add rice, vegetables and seasonings. Cook, uncovered, over medium heat for 30 minutes. Add chicken. Simmer for 30 minutes or until vegetables are tender.

In a hurry, cook 3-4 chicken breasts and dice. Add chicken bouillon to water for flavor.
