2 T. butter 8 slices Canadian bacon 4 English muffin - cut in half 4 c. Hollandaise sauce 8 poached eggs
Melt butter in large saute' pan and warm the Canadian bacon over low heat. Place 2 halves of English Muffins on plate and cover with a slice of warm Canadian bacon. Set a poached egg on each slice, then ladle hollandaise sauce over the eggs. and serve.
