8 corn tortillas
16oz reduced fat ricotta cheese
2 T taco seasoning
2 c shredded cheddar cheese
2 c cooked shredded chicken
1 10oz can mild enchilada sauce
Directions:
Directions:
Wrap tortillas in plastic wrap and microwave for 60 seconds. Mix ricotta cheese, taco seasoning, 1 c cheddar cheese and shredded chicken together in a bowl. Spray baking dish or bakeware. Spread filling in tortilla's and place in baking dish. Pour enchilada sauce over and microwave 10-12 minutes on medium. Cover with remaining cheddar cheese and microwave uncovered for 1-2 minutes.
