4-5 Large Walla Walla Sweet onions sliced thin,
1/4 c. butter,
2 c. cooked rice,
1 c. shredded Swiss Cheese,
2/3 c. half & half or evaporated milk,
dash salt,
1/4 grated Parmesan

Directions:
Directions:
Melt butter in large skillet; add onions and cook over medium heat until transparent, but not brown. Remove from heat.
Add rice, cheese, half & half and salt to onions, mix well.
Put in 2 qt. shallow casserole and top with Parmesan cheese.
Bake at 325 degrees for 1 1/2 hours.
