1 cup Bisquick baking mix
1/4 cup finely chopped onion
1/4 cup milk
2 eggs
1/2 cup grated Parmesan cheese
1 (12 oz.) carton creamed cottage cheese
1 pkg. (10 oz.) frozen chopped spinach
(thawed and drained)
4 oz. Jack cheese, cut into 1/2 inch cubes
2 cloves garlic (crushed)
2 eggs

Grease baking dish, 12x7 1/2x2 inches. Mix baking mix, onion, milk, 2 eggs; beat 20 strokes. Spread in dish. Mix remaining ingredients; spoonover top. Cover, refrigerate up to 4 hours.

Heat oven to 375º. Bake until set, about 35 minutes. Let stand 5 minutes before cutting.
