2 eggs
1 cup butter, shortening, or oil
1 tsp vanilla
2 cups flour
2 tsp cinnamon
1 tsp soda
1/4 tsp salt.
4 cups finely chopped fresh apples
1 cup nuts and/or raisins
1 large package cream cheese,
2 Tbsp butter
1 tsp vanilla
1/2 cup powdered sugar


Directions:
Directions:
Mix eggs, butter or oil, sugar, vanilla until foamy, about 4 minutes. Sift flour, cinnamon, soda, salt together and add to egg, butter, sugar, vanilla mixture. Add nuts or raisins if desired. Bake 45 min to 1 hour at 350º. For frosting, mix cream cheese, 2 Tbsp butter, 1 tsp vanilla, and 1/2 cup powdered sugar. Frost when cake has cooled.
