1½ c. sifted confectioners’ sugar
1 c. butter
1 egg
1½ tsp. Vanilla
2 ½ c. flour
1 tsp. Baking Soda
1 tsp. Cream of tartar

Directions:
Directions:
Cream sugar and butter. Mix in egg and flavorings. Measure flour by dip-level-pour method or by sifting. Blend dry ingredients; stir in. Refrigerate 2 to 3 hours. Heat oven to 375. Divide dough and roll out on lightly floured surface. Cut with cookie cutters. Sprinkle with sugar if desired or frost after baking. Place on lightly greased baking sheet. Bake 7 to 8 minutes or until delicately golden. Baking time may vary depending on the thickness of cookies. For smaller or thinner cookies, start with 5 minutes to keep from burning.

* I usually skip the “sifting”. If using flavorings other than vanilla and almond, increase the vanilla by 1/4 tsp. and only use 1/4 tsp. of other flavorings. For instance, a little peppermint goes a long way.

* Instead of refrigerating, rolling and cutting, the dough can be dropped by spoonfuls onto cookie sheet and baked that way.

* This is a great recipe to use for refrigerator cookies. Roll the dough into logs. Refrigerate or freeze. Slice and bake as desired.
