2 lbs salmon fillets
4 TBSP each, lime juice, dry white wine, soy sauce
2 TBSP each, sesame oil, and minced ginger root
2 cloves garlic, minced
1/4 tsp red pepper flakes
1/4 cup finely chopped onions

Directions:

Place salmon skin side down in glass pan. Mix together all other ingrediants and pour over fish.
Let marinate for not longer than 3 hours.
Grill over hot coals 5 mins on each side.

The fish is very flavorful and moist. Remember fish will continue to cook for about 10 mins after you remove it from the heat so take it off even if it looks a little under done. Goes best with a crisp green salad, crunchy french bread and a good rose or even a merlot or cabernet. No white wine here...
