4-5 lbs peeled and cut up potatoes
1/4 lb butter
3/4 cup milk
3 eggs
salt
pepper
paprika

Directions:
Directions:
Boil potatoes in water for 12-15 minutes or until tender; drain, reserving 3/4 cup water. Place potatoes back in cooking pot.

Mash with butter. Add reserved cooking water and enough milk to make mixture smooth.

Add eggs; salt and pepper to taste.

Transfer to a greased 13 x 9 baking dish. Dot with butter. Sprinkle with paprika to add color.

Bake uncovered at 350º 30-40 minutes until potatoes begin to get a light crust.
