2/3 cup sugar
1/3 cup vegetable oil
2 eggs
1 cup shredded carrots
3/4 cup canned crushed pineapple, well drained
1 1/2 cups Gold Medal all-purpose flour
1/2 tsp. baking soda
1/2 tsp salt
1/2 tsp ground nutmeg

Directions:
Heat oven to 425º. Put a paper baking cup in each of 12 regular size muffin cups, or grease just the bottoms of 12 muffin cups. Stir sugar, oil, eggs, carrots and pineapple in medium bowl until mixed. Stir in rest of ingredients. Spoon batter into muffin cups. Bake 13 to 17 minutes. Cool 5 minutes. Remove from pan.
