4 chicken breasts
2 large onions sliced
2 cloves of garlic minced
1 large can of crushedtomatoes
1 8oz can of tomatoes sauce
1 tsp of salt
1 tsp of crushed oregano
1/4 tsp of pepper
3 Bay leaves
2-5 red and orange peppers

Directions:
Directions:
Brown chicken in olive oil or butter in a skillet
Add onions and garlic and cook until tender.
In a separate bowl combine the other ingredients
Add to the hot skillet, cover and simmer for 1 hour. Stir and turn the chicken three or four times. Serve over rice.

I use by own homemade canned tomatoes when cooking. Store bought is fine to use. You may try the recipe above for a quick and easy tomato sauce and this recipe can be used whenever canned tomatoes are used in this cookbook.
