6 hard-boiled Eggs * (See Perfect hard-boiled eggs recipe)
1/4 C. Mayonnaise
1-1/2 Tbsp. Sweet Pickle Relish
1 tsp. Yellow Mustard
1/4 tsp. Salt
1/4 tsp. ground Black Pepper
pinch of Cayenne Pepper
Paprika, for garnish

Crack the eggshells all over and let them sit in the cold water for 5 minutes. Peel the eggs, cover and chill for at least 1 hour.
Halve the eggs lengthwise. Carefully remove the yolks and transfer them to a small bowl. Mash the yolks with a fork, then stir in the mayonnaise, sweet pickle relish, yellow mustard, salt, pepper and Cayenne Pepper.
Scoop a spoonful of the mixture into each egg white half, or use a piping bag to pipe egg yolk mixture into whites.
Sprinkle filled eggs with paprika. Cover and refrigerate.
