10 plum tomatoes, sliced
4 cloves garlic, minced
3/4 cup fresh basil leaves, coarsely chopped
1 teaspoon lemon juice
1/3 cup olive oil
1 lb mozzarella cheese
Salt and pepper to taste
French or Italian bread slices

Directions:
Preheat oven to 475 degrees . Slice the bread into 1-inch slices. If you're working with a large loaf, you'll then want to halve each slice again. Brush one side of each slice with extra virgin olive oil. Place the slices oil-side down on a cooking sheet, and toast them in the oven until golden brown.
In bowl, mix the garlic, salt lemon, oil, basil and salt and set it aside. Place a slice of mozzarella cheese on each slice of bread, then place a slice of tomato on top of each of the mozzarella cheese; drizzle with the mixture from the bowl on each one of the bruchettas, return the bruchettas to the oven for a few minutes or until the mozzarella starts to melt. Place bruchettas on a large serving plate. Serve it immediately
