2 or 3 qt ovenproof glass or metal pan, square or round
1/4 cup butter
3 lg eggs
3/4 cup flour
3/4 cup 1/2 and 1/2 or whole milk
1 tsp vanilla
2 TBSP sugar

Heat oven to 425º.
Melt butter in the pan in the oven. Leave pan in oven while you mix the batter.
In a blender mix the eggs, then with the machine running add the milk, then flour,then sugar, then vanilla. When well whipped and lump free, pour the batter into the center of the hot butter and bake for 20 to 25 mins. Till browned and puffy.

My Grunmutter made me this for breakfast on the week-ends when I stayed with her and Grunfadder in Goldendale Wa.This is so versatile, altho it's primarily eaten for breakfast in Germany it lends itself to both savory and sweet. Can be topped with fruit and whipped cream or leave out the sugar and it can be topped with swiss cheese, shrimp and asparagus. It goes with anything and the variatuons are endless.
