2 cups sugar
1 cup veg. oil
2 tsp vanilla
3 eggs
4 cups coarsely shredded zucchini
3 cups flour
1 TBSP cinnamon
1 1/2 tsp baking powder
1 tsp baking soda
1 TBSP ground cloves
1 1/2 cups chopped nuts (walnuts or pecans)

Heat oven 350º
In a medium bowl mix the sugar, oil, vanilla, eggs together till well blended. Stir in zucchini set aside.
In a large bowl big enough to hold both mixtures,
stir together all dry ingrediants, add the wet to the dry and stir well to blend. spoon into well greased and floured loaf pans.
Bake for up to an hour and 10 minutes, checking for doneness after 50 minutes.

This is another great bread, the recipe comes from my girlfriend Lori's mom, Iris. She gave me this recipe in 1987 and it's still a holiday standard.
