1 pound of mushrooms
1/2 pound of grated Parmesan cheese
olive oil
1 cup bread crumbs

Directions:
Directions:
On a cookie pan, place mushroom caps and sprinkle with olive oil. Do not soak them, sprinkle only. In a separate bowl, mix cheese and bread crumbs with very little olive oil. Spoon mixture into the caps of the mushrooms. Preheat oven to 400º and bake for 15 minutes or until golden brown. Do not overcook or they become very soggy.

Each time our family vacationed in Florida, Aunt Mary would make this scrumptious appetizer. We would gobble up the mushrooms in seconds. I make Aunt Mary's mushrooms each time we have roast beef or prime rib. I place the stuffed mushrooms around the beef on the platter; they look mouthwatering.
