1 cup yellow cormeal
1/2 cup flour
4 tbsp. sugar
1 cup milk (low-fat, skim,or whole)
2 tbsps. butter or margarine
1 1/4 tsp. vanilla extract or flavoring
1 egg

Directions:
Directions:
Heat oven to 400. Coat 9-inch baking pan or a cast iron skillet with nonstick canola cooking spray, set aside. Combine cornmeal and other ingredients in a bowl and mix well. Pour mixture into pan or skillet and tap on counter to remove air bubbles. Bake 30-45 minutes or until knife inserted in center comes out clean. Lightly butter top of cornbread; cut and serve warm.
