1 pound of lean beef
1 red pepper
1 yellow pepper
1 orange pepper
1 medium red onion
2 small yellow sweet onions
2 can of diced tomatoes with jalapeņos

Directions:
Directions:
Saute ground beef until brown.
Coarsely chop peppers and onions and add to beef.
Simmer for 15 minutes, add canned tomatoes and simmer for 30-35 minutes. Serve over rice or without rice with a side of tortilla chips.

My Uncle Eddie shared a similar recipe with me a few years back. He used beans and a can of salsa. Our family has found the beanless chili has just as much flavor or more. We use the leftovers, the next day and make kicking nachos.
