4 (8-ounce) baking potatoes
3 slices cooked bacon
Canola cooking spray
1/2 tsp. black pepper
1/4 tsp. salt
1 cup preshredded reduced-fat colby-jack cheese

Directions:
Directions:
1. Preheat oven to 425.
2. Pierce potatoes with a fork and bake potatoes for 1 hour or until tender. Cool for 30 minutes.
3. Meanwhile, heat cooked bacon, crumble and set aside.
4. Cut potatoes length wise and scoop out as much potatoe as possible without tearing the skin.
5. Mix potatoe, bacon, salt, pepper, & cheese and put back into skins. Place skins on a cookie sheet and bake for about 13 minutes or until bubbly. Serve with ranch dressing.
