2 cups assorted Cured Olives (Italian or Greek)
2 cups water
2 tsp evoo
1/2 tsp chopped fresh thyme
1 garlic clove, minced
1/4 tsp ground fennel seeds
1/4 tsp grated orange zest
2 tbsp fresh orange juice
1/2 tsp white wine vinegar

Directions:
Directions:
Place olives in a bowl and cover with water. Let stand for 10 minutes. Drain well. Combine the olives. oil, thyme, garlic, fennel seeds and orange zest in a skillet. Cook for 5 minutes or till garlic is fragrant and oil is hot. Remove from heat and stir in vinegar and orange juice. Cool slightly. Serve warm
