1 pkg. puff pastry, thawed
6 large eggs
1 1/2 cups ricotta cheese
1 tbsp hot sauce
2 pkgs frozen spinach, thawed and drained well
6 slices bacon, cooked and crumbled
2 cups shredded mozzarella cheese
1/2 cup grated locatelli cheese
1 cup chopped red bell pepper
salt and pepper

Preheat the oven to 400º. Unfold puff pastry sheets and roll one sheet out to about an 11" and one a bit larger. Grease a 13x9" pan and lay the 11" sheet on the bottom. Beat the eggs and then add the ricotta, grated cheese, hot sauce and spinach. Mix till well blended. Layer half of the spinach mixture in the pan. Top with the bacon, peppers and cheese. Repeat the layers. Place the other sheet of puff pastry on top and pinch the edges together to seal. Brush with another beaten egg and 1 tsp water. Sprinkle the top with salt, pepper and paprika. Make several slits to allow steam to escape. Bake 45 - 55 minutes. Cool for 10 minutes before slicing.

This is a great "method" for a quick brunch idea. You can add any number of meats, cheeses or peppers to make it your own special creation. This can be made the day before, wrapped well and refrigerated until baking time.
