1 large chicken breasts, boneless and skinless
1 c. flour
2 eggs, lightly beaten
1/2 c. Parmesan cheese
2 c. of bread crumbs
1/2 cup olive oil
1/2 cup butter, unsalted
2 cups tomato sauce or spaghetti sauce
1 pound of mozzarella cheese, thinly diced

In a large skillet heat the butter and olive oil over median-high heat. Dredge the chicken breasts into flour. Dip the breasts in the egg, coating all sides. Dip the chicken into the bread crumbs and coat all sided. Cook the chicken breasts until they are deep golden brown on both sides. Put 1 cup of tomato sauce or spaghetti sauce in the bottom of a baking dish large enough to hold the chicken pieces in one layer. Add the cooked chicken to the baking dish. Cover the chicken with he remaining tomato sauce, Cover each chicken breast with 1/4 of the mozzarella cheese. Bake the chicken in the oven for ten minutes at 400
