3 eggs
2 c sugar
1 c oil
2 squares baking chocolate, melted and cooled
1 tsp vanilla
2 c grated zucchini, do not peel
3 c flour
1 tsp salt
1 tsp cinnamon
1 c almonds or walnuts

Directions:
Directions:
Beat eggs. Beat in sugar and oil. Stir cooled chocolate into mixture. Add vanilla and zucchini.
Sift dry ingredients together and stir into mixture. Mix thoroughly. Pour into oiled loaf pans. Bake at 350 for 1 hour 20 minutes.
