Ingredients: 6 slices bacon 2 large stalks celery, chopped 1 white onion, chopped 3 carrots, chopped 5 cups diced potatoes 1 cup water 1 1/2 cups chicken broth 2 tsp gray salt fresh ground pepper 5 tbsp flour 2 cups milk 1 cup heavy cream shredded x-tra sharp cheddar cheese

Directions:Cook bacon in a large soup pan till golden brown. Remove with a slotted spoon. Crumble and reserve for topping. Add onion, celery and carrot to drippings and cook about 5 minutes. Add the potatoes, water and broth. Cover and let simmer for 25 minutes. Blend flour with a little of the milk till smooth. Slowly stir into the hot mixture and continue stirring till mixture begins to thicken. Add remaining milk and cream. Season well. Serve in big bowls with the crumbled bacon and cheese on top. |
