Ingredients: Pastry Ingredients: 1 1/4 cups flour 1/4 cup sugar pinch salt zest of one lemon 1/2 cup softened butter 1 egg yolk 2 tbsp Amaretto Filling: 30 oz. Ricotta cheese 4 eggs 1/2 cup sugar 1/4 cup flour 1/4 cup Amaretto zest of 1 orange and 1 lemon 1/4 cup yellow raisins, if desired

Directions:Preheat oven to 350º. Lightly grease a round 4" deep cake pan or a springform pan. To prepare the crust: Sift the dry ingredients together and add the lemon zest. Cut in the butter till crumbly. Beat the egg yolk with the Amaretto and stir in to butter mixture. Combine well. Press crust on to bottom and up sides of pan. Bake for 15 minutes till dry, but not browned. Remove from oven. Lower oven to 325 For the filling: Beat the ricotta, eggs sugar and flour together on low speed till smooth. Beat another 5 minutes on medium. Stir in the Amaretto and the zests---add the raisins if you wish. Bake for 1 hour or until cake tester or toothpick come out clean. Let come to room temperature and then chill for at least 2 hours before serving. Best if made the day before. |

Notes: This incredible cheese cake is worth every calorie. The flavors are so rich and delicious, it practically melts in your mouth. Serve this topped with fresh raspberries and drizzled with a bit more Amaretto. For an extra special presentation, sprinkle a bit of 10x sugar on top and add a sprig of fresh mint. Take the cake from the refrigerator and let stand for 30 minutes before slicing.
