1 cup ricotta cheese
1/2 tsp salt
1/3 cup flour
1 1/2 tbsp. soft butter
1 1/2 tsp. lemon zest
vegetable oil
honey

Beat the eggs till lite and frothy. Add the ricotta and the salt; beat till well blended. Slowly beat in the flour, then add the butter and the lemon zest. Cover bowl with plastic wrap and let sit at room temperature for 2 1/2 hours.
Heat a large skillet. Add oil to about 1/2" height and let heat till very hot over medium high heat. Drop batter by tbsp and fry till puffy and golden on both sides. Remove to paper towels. Drizzle honey over the fritters and serve warm.

These fritters are a hit with everyone. They're moist and chewy and the honey makes them so sweet. I love to serve these with lots of fresh strawberries. If you prefer a more savory taste, add some basil to the batter and increase the salt a bit. Omit the lemon zest and add some black pepper, and grated.locatelli cheese. After frying, sprinkle the fritters with more grated cheese. Serve the savory ones with roasted red peppers. Fantastic!
