1 tbsp evoo
1/2 lb. sausage, hot or sweet, casing removed
1 red bell pepper, finely chopped
1 medium white onion, finely chopped
1 clove garlic, minced
2 tbsp tomato paste
1 tbsp fresh parsley, chopped
1 tbsp fresh basil, chopped
salt and pepper
1 16 oz pkg Pillsbury Cresent rolls
8 oz mozzarella cheese, shredded

Preheat oven to 375º In a large skillet, heat the evoo. Add the sausage and cook, breaking the sausage into small pieces. Cook till well browned. Remove meat with slotted spoon to drain on paper towels. Add the onion, pepper and garlic to the skillet and cook about 5 minutes. Return the sausage to the skillet and add the tomato paste and herbs. Stir well and remove from heat.
Remove the cresent rolls from the package but do not separate. On a floured surface roll into a 12" square. Sprinkle with 1/2 of the cheese. Spoon sausage mixture on top. Sprinkle rest of cheese over that. Roll up jellyroll fashion, pinching seams together to seal. (use a bit of water to insure seal)
With a serrated knife, cut roll into 1" slices. Place about 3" apart on greased baking sheets. Bake 20 - 25 minutes or till golden brown

These are a great starter to any party. I prefer the hot sausage and sometimes I add more heat with a tsp or two of crushed red pepper flakes. To make these even more special, have a bowl of hot Marinara sauce ready for dipping.
