· ½ cup butter, softened
· 1 cup brown sugar, firmly packed
· 1 banana
· 2 eggs
· 1 tsp vanilla
· 1 ½ cups whole wheat graham flour
· 1 tsp baking soda
· 1 Tbsp ground cinnamon
· 3 cups rolled oats
· ½ cup walnuts
· 1 cup golden raisins

1. Heat oven to 350°F. In large bowl, beat butter, banana and sugar until creamy. Add eggs and vanilla; beat well. Add combined flour, baking soda, cinnamon and salt; mix well. Add oats, walnuts and raisins; mix well. Add in coconut if desired.
2. Drop dough by rounded tablespoonfuls onto ungreased cookie sheets.
3. Bake 10 to 12 minutes or until light golden brown.
4. Cool 1 minute on cookie sheets; remove to wire rack. Cool completely. Store tightly covered.
