1/2 pound ground round
1 onion, chopped
3 carrots, peeled and chopped
1 potato, peeled and chopped
2 cloves garlic, minced
1 T dried basil leaves
2 cups beef broth
1 14 oz can whole tomatoes
2 cups low-sodium V8 or veggie juice cocktail
1 cup water
1/2 cup quick pearl barley
salt & pepper to taste

Directions:
Directions:
Brown ground beef in skillet and drain. In a large pot, saute the vegetables with a little oil until the onion is clear. Add all the rest of the ingredients into the pot and bring to a boil. Turn down to high simmer and let cook through for 45 minutes or more. Make sure barley and potatoes are cooked prior to serving.

A really fantastic winter soup and gets better as leftovers! Feel free to add more veggie juice for more volume if the barley soaks up too much overnight.
