2 1/3 c. brown rice
5 c. beef broth
1 c. Pineapple chunks, drained. reserve juice
1 c. Kidney beans, drained and rinsed
1 c. green peppers, chopped
1/2 c. green onions, chopped tops and all
2 T. parsley
1/2 c. mayonnaise
1/2 c. sour cream
1 T. soy sauce
2 cloves garlic, crushed and chopped

Directions:
Directions:
Cook rice in the beef broth until rice is done and broth is gone. add water if necessary.
Add the pineapple,beans,green peppers,green onions and parsley. Toss together.Add 1/2 cup pineapple juice to the remaining ingredients,mixing well. Pour this mixture over the salad and mix well.
