2 pounds ground beef
1 pound stew beef
2 red bell peppers, chopped
2 hot Italian peppers, chopped and seeds removed
2 medium white onions, chopped
3 cloves garlic, minced
3 large cans crushed tomatoes
2 cans dark red kidney beans, drained and rinsed
1 can white beans, drained and rinsed
1/1/2 cans water (use the tomato can)
1 small can petite diced tomatoes
6 tbsp hot chili powder
2 tbsp cumin
1 1/2 tsp cayenne pepper
2 tbsp minced parsley
salt and pepper to taste
Shredded cheddar cheese
rice

In a hot, large saucepan, add 3 tbsp evoo and the meats. Cook till meat is nicely browned. Drain off the fat. Add the peppers, onion and garlic; cook about 5 minutes or till peppers are tender. Add the crushed tomatoes and the water. Season with salt and pepper. Bring to a slow boil. Add all the spices, the beans and the diced tomatoes. Simmer, gently for at least 1 1/2 hours. Make sure to taste ---add heat or salt and pepper as desired. (if you really like it spicy--add a bit more cayenne pepper). Serve in deep bowls on top of a bit of white rice, and top with cheese

This is one of our favorite dishes. It's so versatile--try it on top of greens for a "taco" salad. Some times I serve it with corn chips. Delicious and really easy. After you make it once or twice, you'll get to know the consistancy that suits you best. Good enough for company.
