9" pie dish
1 1/2 cups sugar
2 tsp cream of tartar
2 cups water
22 ritz crackers
2 tbsp butter
1/2 tsp nutmeg
1/2 tsp cinnamon
spash of lemon juice
double pie crust (see recipe)

Directions:
Directions:
Preheat oven to 400º
Combine first three ingredients and bring to a boil. Boil for 1 minute. Add the crackers and boil 2 minutes longer. Remove from heat. Add the rest of the ingredients and pour into unbaked pie shell. Top with second crust. Make a few air vents and bake till crust is golden brown---about 35- 40 minutes. Cool completely before slicing.

Remember this 1970's hit?? My father got the biggest kick out of this--it actually tastes just like a real apple pie. Serve with a scoop of vanilla ice cream or a nice slice of your favorite cheddar cheese.
