1 lb. ground beef
1 lb. ground veal
1 lb. ground lean pork
2 T. bacon drippings
1 med. onion
2-3 cloves garlic, finely minced
1 T. parsley, finely minced
1 t. salt
1/2 t. thyme
1/2 t. sage
1/2 t. pepper
1/2 c. red wine
3/4 cup bread crumbs
1 large egg, well beaten
1/2 c. mayonnaise

Directions:

Mix the meats together in a large bowl and set aside. Cook the onions and garlic together in a saute pan until the onions are translucent. Add the wine and seasonings. Cook over high heat until the liquid is reduce by half. Add the parsley and let cool. Grease a 5x9 loaf pan and coat the sides and bottom with 1/4 cup of the bread crumbss.Add the remaining bread crumbs, onion and egg to the meat mixture and shape into into a 5x9 loaf. Place in loaf pan and bake in a 325º oven for 60-90 minutes or until firm and a nice brown on top.
