I head of cauliflower
1 tsp salt
1/4 cup low fat milk
2 tbs butter or margarine
2 cups shredded mozzarella cheese
1/2 cup grated parmesan

Directions:
Directions:
In a stock pot boil the cauliflower for 25 minutes or until soft. Drain the cauliflower and put into a mixing bowl. Mash the cauliflower with a potato masher. Add the two tbs of butter, 1/4 cup low fat milk, 1 tsp of salt and 1/2 cup grated Parmesan and mix well. Put mixture in a 9 x 11 baking pan and sprinkle the 2 cups of mozzarella cheese on top. Cover the baking pan with foil and bake at 350 for 30 minutes, remove foil and bake for another 10 minutes.
