1 tbsp olive oil 1 med onion, chopped
1 can ground, peeled tomatoes 5 c chicken stock
Salt and Pepper 1/2 c basil, thinly sliced.

Directions:
Directions:
Heat oil in a med stock pot. Add onion, cook until soft, about 10 minutes. Add tomatoes and stock. Bring to a boil, reduce to a simmer. Cook until soup is slightly thickened, about 20 minutes. Season with salt and pepper. Stir in basil. Using a stick blender blend until smooth, serve.
