4 lb baby potatoes 2 c heavy cream, more to cover
4 tbsp butter 2 sprigs each thyme, sage, rosemary
2 garlic cloves, cracked Salt and Pepper
1/2 c Parmesan, grated

Directions:
Directions:
Halve potatoes into a large baking dish, season with salt and pepper. Place cream, butter, herbs, and garlic in a small sauce pan; bring to a simmer over med heat. Cook 5 minutes to infuse the cream with flavor. Season with salt and pepper. Pour hot cream through a strainer over potatoes. If there is not enough to cover 3/4 of the way up add additional cream. Sprinkle with Parmesan cheese. Bake 30-40 minutes, until potatoes are cooked through and being to brown. Cover and keep warm till serving.
