1 lb. ground beef
1/2 c. chopped onion
1 clove garlic, chopped
salt and pepper to taste
8 6" flour tortillas
1 - 8 oz jar taco sauce
4 T butter
4 T flour
2 t. instant chicken boullion granules
1 1/3 c. water
1 small can chopped green chilies
2/3 c. sour cream
shredded cheddar cheese

Directions:

Brown ground beef, onion, garlic, salt and pepper. Add taco sauce. Divide meat mixture with about 1 T shredded cheese equally among the flour tortillas. Roll up and put in 13 x 9 casserole dish, seam side down.

In sauce pan melt butter, add flour and chicken boulllion, stir until smooth, add water and cook, stirring constantly until thickened. Add sour cream and green chilies. Pour over tortillas.
Bake at 350º until bubbly, about 15 minutes. Top with grated cheese and cook until melted, approximately 5 minutes.

This is a wonderful recipe I got from my sister Carol. I'm not sure where it gets its name since enchiladas are usually made with corn tortillas but it is delicious. When my son Josh and his wife Lisa come for dinner this is usually what they ask for.
