Butter-Crunch Crust:
1 C. flour
1/2 C. butter, softened
1/4 C. brown sugar
1/2 C. walnuts
Filling:
3/4 C. sugar
6 fresh peaches, sliced
1 Tbsp. lemon juice
Dash of salt
1 envelope unflavored gelatin
1/4 C. cold water
1/2 C. boiling water
1 C. heavy whipping cream, whipped

Crust:
Mix crust ingredients together and pat into a pie tin. Bake at 375º for 10 minutes.
Filling:
In a bowl, toss sugar with peaches, lemon juice and salt.
In a separate bowl, soften gelatin in cold water and then dissolve in boiling water. Combine gelatin mixture with peaches.
Fold whipped cream into peach mixture. Place in cooled crust and refrigerate.
