large potatoes
olive oil
naturally fresh lite peppercorn dressing
1/2 cup parmesan cheese
paprika (optional)

Directions:
Directions:
Brush cleaned potatoes with olive oil. Bake uncovered in oven until done, turning once. Remove from oven and cool. Cut thin slices from top and scoup out the insides, putting the potatoes in a bowl. Add 1/2 cup to 3/4 cup dressing and about 1/2 cup parmesan cheese. If mixture is too dry, add more dressing - if too "mushy" add more cheese. Mix and then scoop mixture back into empty potatoes. Add paprika for color if desired

Bake at 350º until warm (approximately 15 minutes) just before serving

Make ahead and keep in refrigerator. Baking will take a little longer if potatoes are cold.
