Ingredients: 1 cup water 1/2 cup butter 1/8 tsp salt (dash) 1 cup flour 4 eggs ( at room temp) Filling for puffs

Directions: |
Directions:In a medium saucepan, combine the water, butter and salt; bring to a boil. Add the flour all at once stirring till well combined. Cook till the mix forms a ball. Remove from heat and let cool for 10 minutes. Add eggs. one at a time, stirring well with a wooden spoon. Preheat oven to 400º. Drop by rounded heaping tbsp. onto a well greased cookie sheet. Bake for 30 - 35 minutes or till golden. Transfer to a wire rack and cool completely. Cut tops from puffs and remove soft dough from inside. Fill with your favorite pudding or heavy whipped cream sweetened with sugar and vanilla. Replace tops. Sprinkle with 10x sugar before serving |

Notes: These puffs can be very versatile. Try filling them with a savory filling instead--maybe a spinach and artichoke combo or roasted pepper tapenade. Wonderful!
