Ingredients:  
1 cup cooked rice
3 oz. of Parmesan cheese
2 eggs
salt and pepper to taste
fine bread crumbs
cubed mozzarella

Directions:
Directions:
Cook rice. Add cheese, eggs, salt & pepper and little bit of bread crumbs to hold. Form in hands like a meatball. Fill in center by pushing thumb in to make hole and putting mozzarella cube in. Close hole. Roll in bread crumbs. Fry in deep fat until golden brown.

Center can be filled with ham, cheese, pepperoni, whatever you want.
