4 eggs
2 1/2 Cups sugar
1 1/2 cups oil
2 Tbsp. vanilla
3 cups zucchini (shredded, blended, whatever)
2 tsp. cinnamon
2 tsp. salt
2 tsp. baking soda
1/2 tsp baking powder
4 1/2 cups flour
1 cup chopped nuts (optional)

Directions:

Mix all ingredients well. Pour into 2 greased and floured loaf pans.
Bake at 350º for one hour or until done.
