3 whole chicken breasts or 6 halves (boneless & skinless)
2-3 beaten eggs
1 tbsp. parsley flakes
1 tbsp. butter
1 tsp. garlic powder
3/4 lb. mushrooms
12 oz. Munster cheese, shredded
1 cup chicken broth
1 cup unseasoned breadcrumbs (Italian breadcrumbs work too)

Directions:

Preheat oven to 350º. Cut chicken into bite size pieces and marinate in beaten eggs for 2 hours. Mix all dry ingredients in plastic bag & then coat chicken in the bag. Brown coated chicken in butter on both sides. Layer chicken, Munster cheese and mushrooms in baking dish. Pour chicken broth all over dish. Bake at 350º for 45 minutes. Let stand for 5 minutes then serve.

I first had Chicken Kelly in the early 80’s at a friend’s house who was having a buffet lunch for her son’s graduation. While there was a lot of food, this dish was the overwhelming favorite with everyone. She eventually made copies of the recipe because everyone asked for it. I gave it to Evy many years ago and she serves it every New Year’s Day when her friends come over. It is great as a stand alone meal or as part of a buffet. This is one of my favorites.
