61/2c canned black beans 1/2c salsa
1/2c diced red onion 1/4c diced red bell pepper
1/4c chopped cilantro 2c bread crumbs
1T diced jalapeņo pepper 1/2t green jalapeņo sauce
Tortilla Chip Breading: 2c crushed tortilla chips and
1t each of cumin and coriander

Directions:
Directions:
1. Rinse beans in a colander and drain for 10 minutes. 2. Add all ingredients except tortilla breading in a mixing bowl. 3. Blend with hands, mashing most of the beans. 4. Form into 3oz patties. 5. Make breading in food processor and dredge each patty in it. 6. Saute in olive oil until browned. 7. May serve with sour cream, salsa and margaritas.
