3 large tomatoes
4 oz Monterrey Jack cheese w/ jalapeño pepper, shredded
1 small green, yellow or red sweet bell pepper, finely chopped
1/4c toasted sliced almonds

Directions:
Directions:
1. Cut tomatoes into 1/2" thick slices.
2. Arrange slices in a shallow foil disposable pan
3. Sprinkle with cheese, peppers and almonds.
4. Place tomatoes on center of grill with coals at edges. Grill covered 12-15 minutes. Serve.
Baking: Also may be baked for about 15 minutes in a preheated 350º oven.
