2 - 3 lbs asparagus, trimmed
salt
pepper
evoo

Directions:
Directions:
Preheat oven to 450
Cut ends off asparagus or use the old "hold it at both ends and see where it breaks" trick. Cut pieces the same length
Place on a cookie sheet and drizzle about 1/2 cup evoo over the top along with the salt and pepper. Roast for about 15 minutes, turning once. Serve warm
For a real treat, try wrapping a slice of prosciutto around the asparagus. Roast for the same time, but at 425

What could be more simple? It's so mouth watering, you'll want to make this all the time. Try this same method with other veggies -- like blanched broccoli tops or califlower bundles.
