3 corn on the cob, medium ears
1 onion, medium, quartered and sliced
1 red bell pepper, cut into 1/2 inch squares
1 clove garlic, minced
2 tablespoons vegetable oil
3 zucchini, medium, sliced (about 1 pound)
1 tomato, large, peeled and chopped
2 jalapenos, seeded and minced
1 1/2 teaspoons basil , fresh, chopped
1/2 teaspoon Italian seasoning
1/2 teaspoon salt
1/4 cup Parmesan cheese, freshly grated

Cut corn kernels from cobs, and set aside. Saute onion, bell pepper, and garlic in a large skillet for 5 minutes. Add zucchini; cook, stirring often, about 7 minutes. Add corn, tomato, and next 4 ingredients; cover and cook over low heat, stirring often, about 7 minutes. Sprinkle with Parmesan cheese, and serve immediately.
