3 lbs hot Italian sausage, cut into 3" pieces (links)
evoo
3 bell peppers, any color you'd like to use or a variety
3 hot Italian banana peppers, seeds removed
3 white onions, sliced thin
5 cloves garlic, chopped
1 cup dry red wine
1/2 cup grated locatelli cheese
fresh basil for garnish

Par boil the sausage for 10 minutes. Drain
In a very large skillet, heat the evoo, about 4 tbsp, and add the sausage. Cook for 10 minutes, turning every few minutes to prevent from sticking. Add the peppers, onions and garlic. Continue cooking till the peppers are tender, but not mushy. Add the wine, cook for a minute or so and transfer to a baking dish
Preheat oven to 350
Top with 1/2 cup grated locatelli cheese, cover and bake for 25 minutes
Serve on toasted sub rolls.

My Dad loved these sandwiches. For a real treat, try melting some mozzarella cheese on the top. And don't forget, you don't have to make a sandwich out of this. It's delicious as a solo!
