Ingredients: 1 1/2 lbs semolina flour, plus more for kneading 1/2 cup chopped parsley 2 tsp white pepper 3/4 cup grated locatelli cheese 2 tsp salt 3 large eggs 1 recipe homemade chicken soup

Directions: |
Directions:Place the semolina flour on a large working surface. Add the parsley, salt, pepper and the cheese. Combine well. Make a well in the center of the flour mixture and crack the eggs in. Work together with a bit of the chicken broth, kneading together until you have a very smooth dough. Break off tiny bits of the dough and roll between your thumb and forefinger to make small pieces, no bigger than a fat puff of rice. Lay the pieces on another surface that is covered with semolina flour. Work as quickly as possible (it's better with 2 or 3 people making the puffs.) Meanwhile strain the soup, reserving the chicken and veggies. Bring the soup to a slow boil and add the semolina puffs (place the puffs through a strainer first to get rid of any excess flour) Cook for about 5 - 7 minutes. Add the veggies and the chicken. Serve piping hot with extra grated cheese. |

Notes: This incredibly delicious soup came from Italy with my Grandmother whom we affectionately called "Mommy". It is alot of work, but the taste is totally unique to our family. It's a soup that we make on very special occasions, and one that always takes us back to our childhood. No one made it quite like Mommy and my Godmother, Mum. Mangiare!
