6 or 8 large potatoes, pared and grated
1/2 small onion, grated
3 eggs, well beaten
1 1/2 cups hot milk
6 Tbsp. butter or margarine, melted
2 1/2 tsp. salt
1/4 cup minced parsley

Directions:
Directions:
Blend potatoes and onion. Stir in beatedn eggs, hot milk, butter and salt. Fill a well-greased shallow baking dish about 7x12". Bake at 350 degrees for 1 hour 15 minutes. Sprinkle parsley on top.
